Chia Pudding

Serves 4 - 6

Ingredients (PUDDING):

  • 900g chia seeds

  • 1 litre coconut cream

  • 500ml coconut water

  • 1 tablespoons agave syrup

  • 1/2 vanilla bean

  • 100ml hot water

Ingredients (GARNISH):

  • Handful of your favourite locally grown berries

  • Diced Australian mango

  • Pure maple syrup

  • Toasted coconut

Method:

  1. Combine all liquids and slowly add chia while whisking.

  2. Leave to set overnight and adjust the sweetness and liquid if necessary by adding more coconut water or agave.

  3. The next morning, serve with berries, toasted coconut, maple syrup and diced mango.
